I’m fairly convinced I could be a vegetarian without much hassle. Now don’t get me wrong, I love me some steak fajitas, barbecued ribs or pork chops…I just don’t cook meat that often. Especially if I’m only cooking for myself. That being said, I’ve had low iron levels on more than one occasion and my mother is constantly badgering me about my eating habits. Sorry I love popcorn and wine for dinner Mom! (jk. I don’t do that. Often…) In searching for easy ways to add more protein into my diet I came across quinoa and began experimenting with it.
Chocolate. Peanut Butter. Pretzel. Cookies.
You read that right. Salty pretzels with sweet chocolate and creamy peanut butter. All jammed into a cookie together with their friend oatmeal. I struggled coming up with a name because there are so many good ingredients in these bad boys! But I figured “Oatmeal-Chocolate-Chip-Peanut-Butter-Pretzel-Cookies” sounded like a bit of a mouthful, so I tried to cut it down a smidge.
Have you read Born To Run yet? If you haven’t, drop everything and go pick up a copy and read it. Now. Seriously guys, it’s that good. Kelly read the book first and mailed it to me, telling me to read it. However I looked at the title and thought “Meh, I don’t feel like reading some motivational-get-you-inspired-to-run-and-love-running book” and set it aside. Fast forward a few months and I finally decided to start reading. I was hooked. Immediately. I kept telling my boyfriend over and over “you have to read this! It’s so good!” But you see, he’s not a runner and had a pile of other books to read, so he too set it aside for months. Well, now that he’s read it (in under a week I think) and has become obsessed with running more and eating healthier, I think I’m regretting my decision to make him read it (aka I’m lazy). He had me hiking/trail running every day last week with him. 5 miles! Up hill! Ok ok, I can’t complain too much. It was almost 60 degrees here and this was our view from the top:
Well Stephanie, I guess I take the cake on baking procrastination… In my defense, I made this specifically for Valentine’s Day at the office but just haven’t blogged about it until now. The beauty of puppy chow, however, is that it is not holiday specific. You can make it for Easter or 4th of July or tomorrow, just because you feel like it!
If Kelly has a Nutella addiction, I have a peanut butter addiction: on my toast at breakfast, with an apple at lunch, by the spoonful for a snack, on my ice cream at night…it’s a daily necessity. I recently found this honey peanut butter from a local peanut shop. AMAZING. Seriously. I tried eating normal peanut butter after having this and I couldn’t. It’s that good. Sometimes I just eat it with a spoon (someday my metabolism is going to quit on me and I’m going to weigh 500 pounds…)
